this is what my day consisted of.

baking. baking. baking.


that's three {!!!!!} batches of granola bars, one dozen toneitup protein bars {not yet cut} and some chicken meatloaf muffins. today was a rainy day so the baking was actually a perfect way to spend the day. and how did i finish it off? training a client at six then coming home and playing with this guy.


isn't he a cutie? we sort of adopted him when my father-in-law bought this house. he goes by the name of 'white christmas'. the year we found him it snowed almost ten inches in corpus christi {another !!!!!}. after all the time spent in the kitchen, i am beat. but i will leave you with my granola bar recipe. it's a little high in sugar content but that could be controlled by using brown sugar splenda instead. they make a great snack to sprinkle into greek yogurt or a good after school munch for the kiddos. enjoy!

peanut butter granola bars

preheat oven to 300°.
in a saucepan, whisk together 3T olive oil, 1T water, 1/2 cup brown sugar, 1/2 cup all-natural peanut butter. let sugar dissolve and all ingredients 'melt' together for about five minutes. take off heat to cool.
while wet mixture is cooling, in a large bowl and with your hands, combine 1/2 cup slivered almonds, 1/2 cup old-fashioned oats, 1/2 cup cranberries {or your choice of dried fruit of the same size or cut into pieces}.
once saucepan has cooled somewhat, crack an egg white into the mix and immediately start whisking {vigorously!}. you want this mixture to turn into an almost caramel/taffy-like consistency.
with a spatula, combine the wet mixture with the dry ingredients. then spread the goods into an 8X8 baking pan lined with parchment paper in a 'T' pattern {you can kind of see how it's done in my first pic}.
slice into a dozen and chomp chomp chomp :)
