tonight.

alice waters was my best friend.


after a longstanding fear of roasting a WHOLE chicken, i faced it. i stood up to what i expected to be ultimate defeat. and then. and then i found her. hiding on my cookbook shelf, waiting to help me make my easiest dinner yet.




SO easy that i was even able to sneak away from the house for a bit to enjoy a few sips of this with a friend. so thanks alice, until we meet again.
and oh yeah! this little stink butt decided to be my sous chef for the night. such a big help.

***i wish i could show you photos of the finished product but this family of three gobbled it all right up. yeah, it was that good.***

although.

it didn't result in the best sleep. last night we made our way to a little dindin for the school district's super-intendent {our architecture firm designs mostly schools}. there were a lot of laughs to be shared but i mostly enjoyed my time with two of my favorite-est people.

mila's future best friend.

how cute is this little guy?


last week two of our friends finally returned from seoul, so some long-awaited dinner plans were definitely in order. nick and i couldn't believe how much their baby jay had grown in the nearly four weeks we hadn't seen him and he's developing quite the little personality. him and nick shared some serious drum sessions at the table {think the husband might have some competition}. can't wait until soon-to-be dad gets to teach mila a few beats....and i knowwwwww he will!

the gov.

while i may not be a fan of all of his political stances, i can say that our dinner with the gov'na last night was quite a treat.

since he IS an aggie, i definitely have a bit of a soft-spot for mr. perry. plus, he is a super nice guy with only good things to say about this wonderful state of texas. sooo, while i may not be voting for him in the next presidential election {the husband and i have a little bet going....i definitely think mr. p is going to run in 2016}, i do kinda like the guy {in a very non-political way}.

what's for dinner.

i did a late cardio sesh tonight {4:45} which put my protein shake at like 5:30. not enough for me for dinner - mainly because i have to have that 'chew factor'. so around 6:45 the munching urge came on. i exercised that urge with lots of veggies.

veggies + hummus = perfection {even for a non-vegetarian}
lately i've been eating the 'pita pal' hummus. i get it from our local sun harvest. it's in what i call the 'fresh' section - with all of the cheeses, marinated olives and feta cheese. i love it because it's creamy, almost has a citrusy zing to it AND it's made in texas. for dessert i'm snacking on a toneitup protein bar.

gonna be an early night for me. last night i didn't sleep well so today i picked up some bach's sleep remedy spray.

friday night = date night

since the mister has gotten back to corpus, we have yet to spend much time with my mom...soooo tonight we're including her in our date night and heading to one of our favorite restaurants in corpus (they also have locations in houston), thai cottage. so excited. i'm just about to go pick him up....going for a quick fifteen minute or so run....then getting all dolled up for my boo (and apparently my mom lol). hopefully this dinner won't put me into a heartburn induced stupor--something i often get when i eat out or just eat a big meal in general. keeping my fingers crossed.
tomorrow is supposed to be a fun-filled day at schlitterbahn in new braunfels. celebrating nick's birthday a little late but this is a water-packed trip he's been looking forward to since he left that place the last time.
any texas day trips you've ventured out on recently?? we're always up for a short ride in the car followed by another surprise of the many things and landscapes that texas has to offer!!
